You probably know that feeling when you're rushing to work or school in the morning and don't have time to eat breakfast.

Everything you could possibly eat takes some time to prepare, and you really don't have a minute to spare. After a while you say, okay, I'll eat something later, and you leave the house.

After a few hours, you remember that you didn't eat breakfast after all, and you go straight to lunch.

You might think that this is nothing special, but this is exactly how problems begin. And what kind of problems?

First, in the long run, your metabolism slows down, and as a result, digestive and weight problems begin. Irregular eating is enemy number one when it comes to such problems.

Second, without breakfast and the necessary energy, it's simply going to be quite difficult for you to do anything for more than a few minutes. And even a second morning coffee won't help you with that.

And what can you do in such cases?

For example, you can make this healthy vegan granola. It's packed with energy, healthy nutrients, vitamins, and will definitely give you everything you need in the morning.

Its initial preparation takes about 30 minutes, but it will make enough for about 20 servings.

You can eat it in the morning as is, or add some fresh fruit. You can also make it the day before with either regular or plant-based milk or yogurt, and take it with you to work or school.

And how can you make this granola at home?

What will you need?

  • 1 cup roughly chopped almonds or almond “sticks”
  • Exotic nut mix from InfiNuta
  • 2 tablespoons chia seeds
  • 2 teaspoons ground cinnamon
  • 2 tablespoons coconut or cane sugar
  • ¼ teaspoon salt
  • 2 tablespoons coconut oil
  • ¼ cup maple syrup or agave syrup
  • 100g puffed millet or puffed rice
  • Dried fruit of your choice

How to proceed?

  1. Preheat the oven to 165°C, prepare a baking sheet, and line it with baking paper.
  2. While the oven is heating, mix the almond sticks, mixed nuts, half the ground cinnamon, sugar, and salt in a large bowl.
  3. Place the coconut oil and maple syrup in a small saucepan and heat to about 122°F (50°C). Pour this syrup into the bowl with the dry ingredients and mix well.
  4. Pour everything from the bowl onto the baking sheet and spread evenly. Bake for about 20 minutes, then add the dried fruit, chia seeds and mix well. Bake for another 5-7 minutes, remove from the oven and let the granola cool completely.
  5. Add the puffed millet and the second part of the ground cinnamon to the cooled granola and mix well.
  6. This granola will last for about 2-3 weeks in a well-sealed, airtight container.
  7. Serve with plant-based or regular milk, or yogurt and fresh fruit.
  8. Enjoy your meal :)
